Thanks to my friend and world-traveling cyclist, Lynette Chiang, also known as the Galfromdownunder, and who is also Bike Friday's Customer Evangelist, I can share with you this video of me fixing her flat on the road at PacTour's Bike Friday Desert Camp a couple of years ago (PacTour puts on some of the best bicycle tours I've been on - highly recommended).
I fix the flat pretty quickly but it should help explain the technique to see it done, and I've added the video to my hands-only flat tire repair page on my website too, so you can now read the step by step, study the tips and watch it being done too. Hope it helps make you an expert!
